Marinated Artichoke Hearts

Who doesn’t like a marinated artichoke heart, really? Sure, you can buy them already marinated in a jar, but there never seems to be enough artichoke hearts in there, they are very expensive (for some reason), and just not worth buying since you can make them easily at home. Keep them in a mason jar, and snack at will.

Ingredients:

  • 1/2 cup olive oil
  • 2 cans of artichoke hearts, cut lengthwise
  • salt and pepper
  • 2 tbsp white wine vinegar
  • 1 shallot, thinly sliced
  • 2 sprigs of fresh oregano
  • 1 lemon, thinly sliced and seeds removed

Recipe:

Step 1: Heat oil, shallot, lemon, and oregano in a skillet over medium heat, and cook, stirring occasionally, until the shallot and lemon begin to brown, about 6 minutes. Season with salt and pepper off the heat.

Step 2: Place artichokes in a medium bowl and season with salt and pepper. Pour the oil/shallot/lemon/oregano mixture over the artichokes, along with vinegar, and let them marinate for at least 30 minutes, tossing them occasionally so that every artichoke heart gets some love from the marinade. Or stick them in a mason jar in the the fridge to marinate for hours until ready to snack. They taste amazing the next day after having had a full day to marinate. Enjoy!
