This simple but delicious brunch dish uses items you likely already have – frozen mixed berries and pantry staples like oats, flour, sugar, cinnamon, and butter. It uses unprocessed raw sugar (and not too much of it), is full of healthy and filling oats, and is ready in under an hour. I call this my self-care baked berry crumble. Because it truly is. Also, if you have other frozen fruit besides mixed berries, you can use that too, no problem!



Serves 2
Ingredients:
- 2 cups frozen mixed berries, thawed
- 2 tbsp flour plus 1 tsp flour
- 2 tbsp unsalted butter, at room temperature
- 1/2 cup rolled oats
- 2 tbsp raw/unrefined brown sugar (you can use regular sugar too if that’s all you have)
- a few pinches cinnamon (eyeball it)
- pinch of salt
- 1 loaf pan
Recipe:
Step 1: Preheat oven to 350 degrees
Step 2: Mix the thawed berries with 1 teaspoon of flour in a loaf pan.
Step 3: Combine in a bowl the oats, the remaining 2 tbsp of flour, brown sugar, butter, cinnamon, and salt. Mix all together using your hands to form pea-sized crumbs. Sprinkle the topping over the fruit.
Step 4: Bake for 25 minutes, until the top is browned and the fruit juices are bubbling.
Note – This recipes feeds 2. If you want it to feed 4, double all the ingredients, and use a 9 inch pie pan instead of a loaf pan, and bake for 45 min.
